My friend gave me this recipe. She didn’t say don’t share it, just don’t bring it to potlucks – it’s her go-to recipe and I love that it’s a healthy, tasty, meal that takes about 15 minutes to put together.
Ingredients:
2 spring onions
1 handful dill (you won’t see this in the pictures, because it forgot it – but it’s better with dill)
1 large handful curly parsley
210g can salmon (splash out on red salmon, it’s worth it!)
1 small pot of pesto
2 cups brown rice
Cook the rice.
Cut up the spring onions, parsley, and dill.
Mix all ingredients together. That’s it! Serve with a side of greens.
This tastes reeeaaaaally good – and not just because for once I don’t have to do the cooking!
